Fried Yam and Pepper(Ghanaian Food)

Ingredients
1 medium sized yam tuber
Oil for Frying

Ingredients for the pepper
4 red peppers
2 tomatoes
1 onion
1 glove of garlic
Salt to taste
Seasoning(optional)

METHOD:
I prefer to use earthenware pot to grind the pepper, that's the traditional way.
But if you don't have the earthenware pot, you can put all the ingredient of the pepper in a blender.
Blend all together with just a little water.
You can add seasoning if you want and pour it in a bowl and set aside.

Meanwhile peel your yam and cut them into cubes, or thin strips.
Wash them and soak them in salted water

Pour oil in deep fryer or a frying Pan
Whiles the oil is heating, drain the yam pieces and pat them with absorbent paper towels.
Put the yam pieces in the heated oil one at a time, and make sure they are not over crowded in the pan.

You will know when it is done by seeing the yam pieces float to the top.
The pieces will turn from white to pale golden color
Remove from oil and put them on absorbent paper towels.
Sprinkle the fried pieces with salt.
Serve with the hot pepper.
